This cardamom pod is harvested by hand in the jungles of India.

The picking process is very important because cardamom pods are fragile - they can break and lose all the seeds. Cardamom is a plant of the ginger family and is considered very valuable, similar to vanilla and saffron.

Green cardamom has a slightly citrusy, floral aroma reminiscent of eucalyptus. The pods are good for about a year, or sometimes even a little longer.

Cardamom seeds contain valuable essential oils. When cooking with seeds, it is best to remove them from the pods shortly before use and grind them in a pestle. Cardamom is a popular ingredient in curries and other spice mixes.

The pod itself can also be used in cooking, for example, it can be added to water when cooking rice, giving it a pleasant mild cardamom aroma.
