The Ceylon cinnamon tree (Cinnamomum verum) is originally from Sri Lanka, formerly known as Ceylon, but this particular cinnamon is grown and hand-harvested in Madagascar. Cinnamon is harvested in such a way that the trees are able to regenerate their bark and continue to grow, so that a quality cinnamon crop can continue to be harvested.

This cinnamon is a particularly good ingredient in curries and various desserts such as muffins and cakes.
