The spicy, tasty sprouts of Sinapis alba , or white mustard, enhance salads, soups, herb curds, vegetable dishes, and also taste great with cheese or descargars. Mustard microgreens make heavy meals easier to digest. When heated, sprouts lose some of their sharpness.

Mustard microgreens are rich in nutrients, contain vitamins A, B1, B2, C, E and K, as well as minerals - iron, magnesium, potassium, calcium, phosphorus, sulfur and zinc. They contain 30 - 35% protein, valuable bitter substances, enzymes and, of course, essential mustard oil. They may also have antibacterial and expectorant effects.
